I already encountered such an issue. It was under Windows.
It's something happening around the connection to Ooo
socket: jodconverter tries to connect on and waits for...
40s before failing.
In my case, it was an issue with Ooo installed in 32bits not
finding Java installed in 64bits (or the inverse). 
It may be anything that prevents Ooo from finishing its
startup.
Did you try to connect on Ooo with a telnet?
