If you include fiction, I'd recommend Starhawk's The Fifth Sacred Thing.
It contains an impicit ecofeminist view of the culture/environment
relationship. I could do this review for you by the end of August if you let
me know the length, etc. you are looking for.
Also, I'm forwarding an announcement about an upcoming Encyclopedia on
Literature and the Environment, in case this is something you can publish.

In addition, since the Nov 1994 elections in the United States, we are taking
several giant steps toward the toxic world, and the strengthening of racism
and sexism as holy virtues that Starhawk writes about. (One giant leap toward
THAT yesterday, as the U of C demolishes Affirmative Action.)
This book models an alternative.
