Greetings, Lynn! (and others interested in resources for ecofeminism)
We are using the Learning Community approach to indisciplinary learning
at Columbia College and our first theme which we are weaving into a number
of general education courses (Art, Science, Political Science, Religion,
History, English (Writing), English Literature, Speech and Math) is
Environmental Issues. This has been a delightful experience. In my religion
course I have benefitted from the following:

Reuther (deals with creation stories, patriarchal traditions, goddess
traditions, domination & deceit, earth healing)
This Sacred Earth: Religion, Nature, Environment edited by Gottlieb
(has selections from hundreds of literary selections)
Readings in Ecology and Feminist Theology by MacKinnon and McIntyre
Earthcare: Women and the Environment by Merchant
New Creation: Christian Feminism and the Renewal of the Earth by Halkes
Selu: Seeking the Corn-Mother's Wisdom by Awiakta
The Earth Mother: Legends, Ritual Arts, and Goddesses by Jayakar

By the way, you may wonder how this fits into an introductory math course.
One of the math professors created an entire intro text filled with models,
problems, examples, graphs and more--all using environmental themes and data!
