Wow, Heather!  What a great Mom!  I wanted to be a vegetarian when I
was a kid, and wasn't allowed.  It has taken me a long time to become
one, because I kept justifying to myself why I wasn't.  One day I had
a blinding "revelation" (I don't know what else to call it) that I
could not eat the flesh of those I was trying to help.  My major in
college was Animal Science and I almost became a "food animal"
veterinarian!  If you mention vegetarianism in those circles, you will
get put out of the loop immediately.  I never worked on factory farms,
all of my farming experience has been with small family farms where
all the cows, pigs, sheep, goats, etc. have names and are treated with
love. (until they are killed) But I doubt the milk or meat purchased
in a grocery store comes from such idyllic environments.  And how can
you love an animal one day and then kill it the next to eat it?  And
these arguments should make me a vegan, but I'm not.  I don't get the
same sense of revulsion from cheese even though I know animals died to
bring me the cheese!  Even in small dairies, the male calves that are
born are immediately shipped for slaughter for hamburger meat.  Maybe
eventually I will be vegan, I often have vegan weeks, but then I
revert back to my nemesis: cheese! 
The ironic thing now is that my mom is becoming a vegetarian for
health reasons! I tell her we could have prevented heart and weight
problems if she had listened to me when I was little! :)  Nan
