Hi Jonathan and list, I have just downloaded and installed the ICMTGIS application on my iPad, but haven't had the chance to try it fully yet. Five minutes of play before bed showed me that you can digitize on screen, and even load Google Maps imagery to digitize on top, and it also lets you create and edit attribute tables. I think you can export the data too. It's a free application, so it's easy to give it a try:
