I'd be curious to know what people suggest.

What resolution do you need?  Would a smartphone like an iPhone with a good
camera app work?  The iPhone 4 has a 5mp camera and the 4s has a 8mp (I
think).  That coupled with a good free camera app like VSCOcam that let's
you manually choose the focus and exposure points might work well for your
needs

All the images are directly available in the field via any laptop as long
as you have the connected cable as you can treat the image files as a
downloadable only flash drive.

Something like that's seems like it would be a bit more robust than a
portable scanner, but it would depend greatly on your resolution needs.
