We have a links page where you can find the X12 specs for multiple documents. There are links for a large number of companies in the Retail business as well as other EDI related resources. http://www.spe-edi.com/links.html JCPenney has a lot of documents with examples and explanations. https://supplier.jcpenney.com/supplier/general/edi/edi_jcp/index.asp then look under the Mappings menu selection. The X12 structure is simply a delimited flat-file with a 2 or 3 character Segment identifier at the beginning of each record.
