Anyone can publish in any structure they like. Various software companies have developed and presented their XML structures in the hopes that adoption would make it more widely accepted than others but in the end SAP XML needs to be mapped to ebXML, to Oracle XML, etc. And yes there are many "Any to Any" true mappers out in the market.
