Good morning, There are no subtle differences. UCS and VICS are actually subsets of the X12 standards.
If you take a look at a 850 transaction set, you'll notice that it is very large. For some in fact, it can be maddeningly, confusingly large, making it difficult for trading partners to agree on exactly which segments within this transaction set they should use to send the relatively small amount of data needed. So a bunch of trading partners got together and decided to select a subset of the standard for use within an industry. This subset contains all of the information required to be able to transact business between the trading partners. The basic premise however, is that they cannot violate the standard. While they made some optional field mandatory, you may not make a mandatory field optional. This applies to both data elements and to segments. And, while they have restricted some of the qualifiers that may be used, they did not create new ones; that would violate the basic standard. Since each of the some standards that you're referring to are subsets of X12, if your translator can handle X12, it can handle these.
