Depending on the EDI application that's being implemented, you should be able to receive training through the software vendor. For example Inovis, Sterling or others. Another good source for basic EDI overview and general training that's non translator specific is: www.ediacademy.com www.ediuniversity.com Also, if you google EDI Training or EDI, you will find a plethora of websites that will be of great value on this topic.
