If you need to view all companies EDI at the same time, then I would suggest:
.EDI .EDI\YYMMDD (auto-create a daily folder) Or, if you need to view companies individually, preface the above with the company name. And, if you want to separate "In" and "Out" then have those sub-folders. Then, you just put a date widget in your viewer application and you can view your EDI documents by date - default date is today's date. By the way, what EDI translator are you using?
