I think this would require some form of terminal emulation support, and a
terminal type of PC ANSI (or some other terminal type that supports color).
FYI the current color for the active console for EFI can be set via:
gST->ConOut->SetAttribute (gST->ConOut, EFI_BACKGROUND_BLACK | EFI_YELLOW);
The curent attributes are:
gST->ConOut->Mode->Attribute
