To ask the obvious: have you tried sprinkling your driver with DEBUG messages? They should show up on the qemu debug port [1] (or the virtual serial console, if you build OVMF with -D DEBUG_ON_SERIAL_PORT). The next step (sub-project, actually) could be building a new installer image with debug messages & serial IO enabled for grub. I have no idea how to do that for Ubuntu, and even for Fedora I'd have to follow the wiki, so I can't readily help with this. Also, in my limited experience, grub debugging is a nightmare; you very quickly reach a spot where the built-in debug messages don't help any longer, and you must add new messages to the source. (But hey, at least you *have* the source, grub2 being GPLv3...)
