Given the apps you want to run, plus the fact that you are running 26 clients, 
you
definitely want at least 1GB.  If there are troubles with your current NIC's 
then buy a
new one.  I have real good luck with the Intel Pro 1000's.  A 100MB connection 
simply
isn't going to cut it.  You may even want to get a dual NIC card or get two and 
team
them with alb.

I would also recommend following Gavin's troubleshooting steps.  The problems 
posted
about those apps (tuxpaint/Gcompris) indicate there may be other problems 
causing the
freezing.
