There's a large section on assessing student work in our Case Studies
brochure:
https://outreach.wikimedia.org/wiki/Education/Case_Studies

Any instructors who have found additional methods of assessing student work
they'd like to share with other instructors are encouraged to create a Case
Study for their own work -- just follow the instructions on that page.
