Have ssh'd into the Box while you are doing this? I'm just wondering if 
you are somehow losing the connection of the internal internal nic.

This is really the best thing to do since you can check and see if the 
nic is up and best of all you can tcpdump to see if traffic is moving 
around.

Unrelated to you problem but I noticed a problem when the external nic 
was down or not set to something valid and you tried to reconfigure from 
the GUI then no NIC's appeared in the selection box of the GUI, and if 
you go ahead with the Network configuration like this you end up messing 
up all the network settings. [That is the bridge devices have no idea 
what eth to attach to and then nothing works.]
