Actually, the deployment descriptor is a .ser . not so convenient...
But your container provider may provide you a tool to generate it from
something more understandable ( generally a form your fill in a graphic
interface)

Nothing prevents an EJB to make lookups on another machine. You just
have to create a correct Context, precising where you search.

It depends on your server implementation. It should be RMI over IIOP but
some servers don't work with IIOP yet.
