I guess the simple answer would be: whatever functions aren't currently accessible with a single button-press. I've often thought of trying to do something like this for my AOR AR-7030 receiver, which has a rather extensive menu system that you access with only a few buttons. It would be nice to have everything accessible with its own dedicated button.
