I'm not an LCD expert, but some general-purpose LCDs are simply an array of dots and you can program them to show anything. But it looks like an array of dots. An example is the LCD on my Array Solutions Power Master http://www.arraysolutions.com/Products/powermaster.htm.
Other LCDs have custom "icons". The VFO A and B areas use seven-segments and a dot sort of construction that gives you numbers and most characters (and i sometimes lower case is used, because upper case D looks a lot like an O or a zero). So during DSP load it shows up as "dSP", which looks amazingly close to d5P (d five p). Other areas like the S-Meter area appear to be custom icons. There isn't any programming to draw the scale of the S-meter. It's "burned in" to the glass. The programming can choose to illuminate it or leave it dark.
