I think most of the defaults in the Carbon port were defined in Andrew
Choi's era, and they are mostly compatible with Emacsen for other
platforms.  If you want to provide NS-like(?) defaults, how about
providing them as a customization theme as mentioned in the recent
"merging Emacs.app" thread in emacs-devel?
