Using "non-ASCII" characters in email can produce strange results. The variety of character sets used by computer platforms and operating systems as well as encoding protocols can cause "misinterpretations" of the characters sent. Thus, when decoded by various platforms you will get different results. I know that this causes problems for users whose language includes accented characters, but that's life in our kludged together system.
