Ahh... sounds like you have a bum link in the File Exchange control panel. You seem to already know about the PC Exchange tab (where you assign the 3 letter extension mapping to a particular application), but there is also a File Translation tab. Click over to it, and take a look at the list of Translation prefs. There is probably one in there for Stuffit files that is pointing to an old, no longer available version of Stuffit.
