I am principally using Outlook Express on my Macs (OS 9.1.).  OE has a
preference for email attachments:  "Append Windows extensions to filenames".

So, even if you did not have the file named with a .xyz extension, the email
application seems to do it.  I suppose that Entourage's email does the same.
