USB would be good especially if you want to control this device from any old
laptop, it is really the only interface you need for thermocouple, digital
IO, etc.

However, I'm not sold on the idea of using EMC to control it. I would think
that a good python interface for the PC would be adequate, why require in
installation of a realtime patched kernel for controlling a smoker? I
suppose you could run it in simulation mode, but even then you require an
Ubuntu distribution, or a very difficult install.
