I don't see it as a dilemma. Your products, as you describe them, are indeed 'professional equipment' as defined. Furthermore, the supply system you describe, ***where only the one consumer is connected to the LV supply***, does constitute a 'private LV network' and IEC/EN 61000-3-2 and -3 (and -11, and -12 when it is issued) do not apply to equipment connected to it.
