With those constraints I'm thinking of something much more analog -
carving duplicator?

I'm sure there's some clever mechanical pantograph-like linkage that could
translate each vertical raster of a multi-2D level stencil into a
corresponding movement up and around the surface of a pumpkin.
The different levels of the stencil would control the depth of the cut.
Rotate the pumpkin an increment, move the stencil over an increment, and
repeat.
But I'm not quite that clever :-)
