With those constraints I'm thinking of something much more analog - carving duplicator? http://www.dust-n-shavings.com/pantograph/pantograph.htm I'm sure there's some clever mechanical pantograph-like linkage that could translate each vertical raster of a multi-2D level stencil into a corresponding movement up and around the surface of a pumpkin. The different levels of the stencil would control the depth of the cut. Rotate the pumpkin an increment, move the stencil over an increment, and repeat.
