I have a screenshot of Windows XP running in a virtual machine in Ubuntu here:

So you insert the Windows XP CD (or the CD for another OS) and restart the virtual machine. The Windows XP installer then runs and installs Windows. But everything is happening in a window in Ubuntu rather than taking over your PC.
