Is there some reason you HAVE to use Ethernet instead of a one wire bus? http://en.wikipedia.org/wiki/1-Wire National Semi made the best sensor last time I dug into this I2C instead of 1-wire - there is even a small amount of memory in the device where you could store error offsets if you need extreme accuracy.
