VNC to the desktop
its part of ubuntu by default, just tick the "allow others to control 
the desktop" box

use SSH for config editing (nano ftw).
use some form of version control (pushing to the interweb) on their 
config files so you can restore stuff.

If you need to be able to handle serious screwups, look into a KVM over IP.
it'll let you modify bios settings and such, you can do everything 
except change hardware ;->

Setup a VPN between your sites for access, or do a port forward but only 
allow access from your (static) ip address.
