If you are confident that your backup server and communications are
secure, it doesn't much matter.  If you are concerned about either of
them, you want to back up your data encrypted.

And it shouldn't be, since that opens up an attack.  But when you
restore it to the same place in your filesystem and mount as usual, it
should decyprt properly.

I use rsync to backup my encrypted files.  If I restore (as I have had
to do once), it all works properly.
