I can't confirm what you describe. I also use Win7 64 bit. I have all columns enabled and see all columns. I there is not enough room, the horizontal scroll bar at the bottom helps (you didn't overlook it, did you?). Thus, if you really have the problem as you describe, something else is different/broken. Just another comment: Enabling and disabling columns in this dialog uses the standard technique of Thunderbird. You have the same button in the main window to configure which column to display for emails. This might not be obvious, but it's consistent...
