I wouldn't know how to disable gnome-panel. Alternatively, you could
simply start enlightenment and have it launch gnome-settings-daemon at
startup. That's how I do it.

Depends on how you installed it.
If you installed e17 from a Ubuntu repo, you *might* get away with
dpkg-reconfigure gdm
and select entrance if available.

I compiled E17 myself (well, the script did it...). This is what I did
on Debian sid, it might work on Ubuntu too:
Edit /etc/X11/default-display-manager (/path/to/entranced). 
        cd /etc/rc2.d/
Add a symlink from entrance:
        ln -s ../init.d/entrance S22entrance
