I do that all the time already. AltGr-e gets me é and so on. This is standard, no need to set up anything, as it's selected when I install Xubuntu, and I maintain a keyboard map for it at http://silmaril.ie/linux/keyboard.pdf But in my work I often need to access many other characters from the Unicode repertoire, and Ctrl-Shift-U nnnn Enter is a convenient way to do this. No matter; it works in many other Linux applications (even Thunderbird, where I am typing now, so if I suddenly need the alchemical 'retort' symbol 🝭 I can just type Ctrl-Shift-U 1f76d Enter and it appears. I can always copy and paste to Terminology. I don't know if this is an Ubuntu thing or if it works in other distros.
