In Word, open that file by selecting All Documents in the Open dialog. The file that opens may still have headers, but all the lines are properly wrapped, without carriage returns.

When you save an e-mail message as Simple Text and then open it in Word you
get a swag of headers you have to remove. In addition most lines end with a
carriage return which is a regular pain to get rid of. My understanding has
been that Entourage is an integral part of MacOffice 2001. In practice it is
very far from being integrated, more like being shoved together. There are
features too numerous to list which I have just turned off or ignored
because of the adverse interactions between Word and Entourage in
particular.

You can also do a lot of quick editing on e-mail messages by selecting the entire text and then Control-click on it, which opens a contextual menu that has several editing commands, including an excellent Auto Text Cleanup....which allows rewrapping of paragraphs, among other items.
