That window is the one that has the “More” button at the bottom. That’s what it’s for: doing things that the simple default doesn’t allow. Even in that simple Create Contact window you can switch the pop-ups for email address and (postal) address from Work to Home. You’re saying this is too much trouble?

Way, way too much trouble. Gives me a headache just imagining it. I may switch to PC’s and pads of paper.
The reaching for the “More” button will suffice. And a QuicKeys setup.
