At the top of the script add this line:
property noteCat: "Business"
Then, change this line:
set noteID to make new note with properties {name:"Journal " & datestmp, content:timestmp & return}
to read as follows:
set noteID to make new note with properties {name:"Journal " & datestmp, content:timestmp & return, category:{category noteCat}}
