Try opening the message and then doing Format->Character Set and picking an
appropriate option manually.
Your case is different but I had something similar with Japanese mail where
the email itself carried a bad encoding header. Since you didn't include any
of the text I can't tell if 'unicode-1-1-utf-8' is correct for that message
or not. According to what I heard from MS, Entourage 'believes' the encoding
in the header but when you select the Character Set manually it overrides
it. It worked in my case for sure.
