That's what plain text means, really: NO FORMATTING of any variety. It makes
no difference to the recipient how you set your default font and size:
that's only for you. The recipients will all see your plain text messages in
THEIR default font and size for plain text. If Entourage were to let you
change it for individual messages, it might well give you the false belief
(that you may already have) that it might make a difference to the
recipient, when it doesn't.

If you want to impose your own size and font on the recipient, that means
that you're formatting, and that means you need to use HTML. You can be as
conservative as you like in HTML - it doesn't _have_ to be super-fancy.
