This is because there is no such thing a text formatting in a plain text
message.  That is, it doesn't matter what you set the text size or font or
anything because that information is not sent with the message.  The message
is displayed on the recipient's computer according to the preferences set.

For example, go to your Edit->Preferences->General->Fonts.  You see, this is
where you set what font you want to see plain text messages in.  However,
this only affects what YOU see plain text messages as.  The recipient will
see them as whatever he or she has their plain text preference set.
