Two suggestions:

1) Enclose the URL in angle brackets like <http://www.apple.com>. This also
helps in some mail apps to improve command-clicking the URL to go to the
address.

2) Lacking the above, when Entourage caps http, just Cmd-Z to undo the
"capitalize" operation, then keep typing.
