I had the same problem with a mailing list that uses the same email address
as its owner, who was also in my Address Book. It got worse with "always
override the list's behavior"! And you're right, except that it seemed to me
that Entourage chose the contact with the lower ID number (whichever contact
was created first) rather than the alphabetically first one. (This would
still be Jane if you created her contact first.)

Why not remove both Jane and John from the Address Book and keep only "John
and Jane Doe" [first name "John and Jane"] in the Address Book? That way, at
worst , a reply to either will go to both-as-display-name. If you correspond
frequently with either one, then that one (or both) will still be in the
address cache you're complaining about, so you can probably still autofill
either name separately.
