If you enter hard returns, it will effectively make your line lengths
shorter.

I don't really see how Entourage could/should do any differently. Making
lines shorter is easy to do, and making lines longer would end up being an
exercise in frustration, since most standards-based SMTP servers and routers
will hard-break your lines anyway if they're too long.
