Scott,
I get read receipts by adding a "Disposition-Notification-To" header and
email address (where you want the receipt to go) in the value column of the
Account dialog under the Options tab.
I'm sorry I can't credit the original source. I'm sure it's one of the many
helpful souls on the Entourage list.
I have noticed that this is only effective if the receiver has a mail client
that understands this message and they don't block the send.
I'm sure there may be other more effective solutions but I hope this helps
in the meantime.
