Because Apple reserved new system-wide shortcuts, such as command-M for
"minimize windows", and MS Entourage is a good Apple citizen that follows
the rules. Since command-M used to be Run Send & Receive All, this had to be
changed to command-K, which used to be Send Now, so that got changed to
command-Enter. It's all Apple's doing. MS would have preferred to keep their
old shortcuts.
