This is from EfX Help, but I believe the method works in 2001. If the
Control-click in #4 does not work, you will need to add the address to the
book manually.

1. Click Mail.
2. Click New.
3. In the To box, type the first few letters of the address, and then click
the address you want to delete on the pop-up menu.
4. Hold down CONTROL, click the address, and then click Add to Address Book
on the contextual menu.
5. In the contact window that appears, click Delete button
6. Delete the message you created (or, re-use it to remove additional
names).
