I have an email that I send to clients.  I keep it in the "Draft" folder.  I then copy and paste the contents into the individual client email.  The heading of this draft email is in bold and is centered.  When I cut and paste, it loses that formatting.  Any way to keep the formatting? (or suggestion on a better way to manage this function?)

Instead of keeping it as a draft, keep it as a signature in HTML. (Press the abab button before you write the signature. Keep your default format as HTML too, or else press the abab button in new message to get HTML, then go to the Message menu --> Signatures --> that signature, and it will all be there. Then continue adding any special extra stuff to the email you may need. (The other way is to DUPLICATE your draft from the File menu or cmd-D. But I like Signature better.) Not copy/paste.

Also, the draft email is in Mishikawa font, which seems to be the standard.  After I cut and paste, I to want to get access to be able to make the font bold.  To do that, I click on the ab<->ab button. When I do, it switches the whole email to Verdana font, medium.  How can I get all email functions to default to Mishikawa?

General Preferences --> Fonts --> HTML Default. Change it from Verdana to Mishawaka, and choose a point size around 12.
