In Entourage 2001, it used to recognize exchange calendar events and give a clickable option to add to your calendar. I have seen this is v.X and REALLY miss it. So on this one I can't help.
On integrating people from the exchange directory, just setup a Directory Service under Accounts in Entrourage. Use the same IP address or domain name you use for setting up IMAP mail and set it as your default director server by clicking on make default. When you create a new mail message start typing the name and click check names and it will bring up a list of people matching what you have typed.
