To fix a bug, I had to reinstall Office X and create a new Entourage identity. Fine. Recreated criteria for task custom views. When in Task, I go up to “View” and select “Incomplete Tasks.” When I complete a task, it puts a line through the task but it remains in the list in this window. Before my rebuild, the task would then disappear from this window. How can I get that to happen again?

View menu --> select Incomplete Tasks (instead of All Tasks). Did you not try that?
In my original email (above) I indicated “When in Task, I go up to “View” and select “Incomplete Tasks.” Seems like that’s the same thing you’re talking about. Am I missing something?
