I still have Entourage routinely screw up message signature changes, by removing large portions of text from my email message.
Of course, I can't seem to reproduce the problem. However, even though you can "undo" the change, it doesn't restore the lost text (I seem to recall this to be true, but I can't verify this). Fortunately, I'm in the habit of selecting the whole message, copying, then changing the sig.
