No, because Entourage v.X's already got this feature built-in :-) Select the text, and either do Edit>Auto Text Cleanup>Remove Quoting, or right-click/control-click and do Auto Text Cleanup>Remove Quoting. There are some other useful reformatting tools in the same submenu. There's no keyboard shortcut for it however, so you might want to have a wrapper script which simply called the built-in function.
